Swiss Water
A solvent-free decaffeination method that removes caffeine from green coffee using a caffeine-free green coffee extract and carbon filtration, relying only on water, time and temperature.
Green coffee is hydrated so the beans swell and their pores open. The beans are then circulated with green coffee extract, water already saturated with the soluble compounds found in coffee but carrying no caffeine. Because the extract holds everything except caffeine, only caffeine migrates out of the beans by diffusion, while flavour and aroma compounds stay in place. The caffeine-loaded extract then passes through carbon filters that trap caffeine molecules and leave the other coffee compounds behind, and the extract is returned to the system for the next batch. No chemical solvents are used at any stage. Swiss Water states that beans finish the process 99.9 percent free of the caffeine they started with, and that organic certification is retained.
